The effect of adding probiotic Bifidus regularis on texture and palatability of vanilla ice cream

Ice cream has been a long time favorite for many people, so why not make ice cream better for digestion! Adding Activia yogurt which contains the probiotic Bifidus regularis can help regulate gastrointestinal function. Bifidus regularis aids in intestinal microflora re-establishment which is what helps improve digestive health. In a study done by Bouvier et al (2001), they linked Bifidus Regularis probiotic to an increased duration of transit time in the intestines. Thus eating Activia for two weeks, everyday has been clinically proven to help regulate the digestive system by slowing down transit time. In this experiment, probiotic-containing Activia yogurt was added to small batches of ice cream in varying amounts that were all analyzed by objective measurements and a subjective taste panel. Statistical evidence shows that by adding 2 ounces of Activia yogurt to ice cream, the desired taste and texture qualities of ice cream are maintained. Additional benefits of Activia in ice cream include the regulation of the digestive system. Ice cream with Activia improves digestive function and tastes great!
